Cooking on the Fly

Cooking is not one of my favorite pastimes. I often say I'd rather stick a needle in my eye than cook, but, of course, I'm restrained by a fondness for not being, well, blind. I do, however, produce hot meals on a regular basis. I say this only because some people assume that since I don't like to cook we're forced to live on a steady diet of sandwiches and Campbell's soup.

Today, I produced this. It doesn't have a name, because as is almost always the case, I didn't use a recipe. I usually rummage through the cupboards and refrigerator to see what's available, then try to think of some way to combine them into something edible. Sometimes my creations turn out well, and others...let's just say others aren't destined to be re-created in my kitchen. Ever. So help me God.

This turned out pretty well, though, which is to say I'll probably make it again, should the ingredients ever again align. Here's how I made it.

I cut three boneless, skinless chicken breasts in half, then cut a pocket into each half, taking care not to cut through. (Not to say that I didn't cut through, just that I was trying not to.)

Into each pocket, I stuffed a small slice of deli ham, spread with Dijon mustard and a small piece of jack cheese.

I seasoned the chicken breasts with salt, pepper and thyme and browned them on medium heat. When they were nearly cooked through, I added a mixture of about two tablespoons each of Dijon mustard and honey, thinned with a bit of water, turned the heat down to low and let them finish cooking.

That's it. If you ever try this, let me know what you think. Um, provided you survive.

Health and Fitness Goals

I mentioned a couple of days ago in rather vague terms that I had some health and fitness goals for 2010. I want my goals to be challenging, but realistic, specific and measurable. So...

I will lose 25 pounds. If I were to lose more, that would be a bonus. Not that I need to lose more. I'm just sayin'.

I will eat some kind of vegetable every day.

I will drink at least 32 ounces of actual water every day.

I will not eat wheat any more often than once per week. Same for dairy. I am crying, here, people.

I will exercise at least 4 times per week.

I will incorporate resistance training in my workouts. I'll do this according to a plan. Yes. An actual plan. As opposed to randomly.

I will record my progress towards these goals on a weekly basis.

I'm getting back into the Word after an absence of "some time" with a planned study on the book of James. This is one of my favorite books and I'm quite familiar with it. Even so, I'm struck - as I always am - by the freshness of the content. The Bible never gets old.

2010 Goals for the Garden

I am "having goals" this year, rather than "making resolutions." Goals for my garden and in almost every area of my life. I figure I may not reach all the goals, but by striving to reach them, I'll almost certainly end up ahead of where I would have been without them. Here is my initial list of garden goals for 2010. Not all are vegetable garden related.

Thank God for Stretch Denim

Not that I've gained a weight or anything like that - I'm just sayin' - but if it weren't for stretch denim, I'd be shopping at The Tog Shop for a pair of these charmers.

Either that or wearing sweats every day. I wonder if that's why my husband was so happy when I cut these up.

So, yeah, losing a few pounds and getting in shape is one of my (many) goals for 2010. I hesitate to say resolutions, because I have such a dismal track record at keeping them. So I have goals this year.

I addition to the health and fitness goals, I have sewing goals, gardening goals, crafting goals, work goals, writing and blogging goals...I have so many goals, it makes me tired just thinking about them. This blog, actually, is in response to one of my blogging goals.

I'll share more of my goals as time goes by, and also post updates on the progress I'm (hopefully) making.

These introductory blog posts are really hard to write and, honestly, the title of this post pretty much sums things up.
